1Fry the beef mince and diced onion for 5-6 minutes until the beef is browned.
2Stir in the garlic and cook for a further minute.
3Add in the tomato purée, ketchup, mustard, Worcestershire sauce, smoked paprika, salt, and pepper and cook for 2 minutes until fragrant.
4Stir in the dry rice and beef stock.
5Bring to a simmer, cover with a lid, and cook for around 15 minutes, stirring occasionally, until the rice is tender. Add a splash of water/stock if needed.
6Once the rice is cooked, stir through the chopped gherkins and gherkin juice.
7Top with the grated cheddar and mozzarella.
8Return to heat and cover until melted and gooey.
9Whilst the cheese melts, make the burger sauce by combining lighter mayo, reduced sugar ketchup, yellow mustard, and gherkin juice.
10Divide the rice between two bowls. Drizzle with the burger sauce, sprinkle with parsley and the bacon sprinkles if using.
