Preheat oven to 220°C.

Toss cauliflower florets with 2 tbsp olive oil, 1 tsp smoked paprika, ½ tsp garlic powder, salt, and pepper.

Toss cauliflower leaves separately with a little oil, paprika, salt, and pepper.

Spread florets and leaves on trays (or separate sections).

Roast florets for 25–30 min until golden.

Roast leaves for 8–10 min until crisp.

Melt 2 tbsp vg butter in a saucepan.

Whisk in 2 tbsp flour for 1 minute to make a roux.

Gradually add 2 cups soy milk.

Then add ½ cup grated vg cheddar, 2 tbsp nutritional yeast, 1 tsp Dijon mustard, ½ tsp onion powder, ½ tsp garlic powder, salt, and pepper.

Simmer for 3–5 min until thick and glossy.

Toast ½ cup panko breadcrumbs until golden.
