Caramelized Onion Spaghetti-Carbonara Style

Directions

  1. 1Slice the onion using a knife and mandoline.
  2. 2Add butter and olive oil to a pan and melt.
  3. 3Add the sliced onions to the pan and cook until caramelized.
  4. 4Pour balsamic glaze over the caramelized onions and mix.
  5. 5Season the onions with salt and pepper.
  6. 6Pour white wine into the pan with the onions and cook until reduced.
  7. 7Grate Pecorino Romano cheese into a bowl.
  8. 8Add egg yolks to the grated Pecorino Romano.
  9. 9Mix the egg yolks and Pecorino Romano.
  10. 10Add Calabrian chili oil and black pepper to the mixture and stir.
  11. 11Boil spaghetti in a pot of water.
  12. 12Add the cooked spaghetti to the pan with the caramelized onions.
  13. 13Add the cheese and egg yolk mixture to the spaghetti.
  14. 14Mix the spaghetti with the sauce until well combined and creamy.
  15. 15Add the caramelized onions to the spaghetti and mix.
  16. 16Serve the spaghetti on a plate.
  17. 17Top with additional caramelized onions and grated Pecorino Romano and pepper.
