Baked Sardines in a White Wine Sauce

Directions

  1. 1Preheat oven to 350 F.
  2. 2Add peeled garlic cloves with salt and pepper in a high sided baking dish.
  3. 3Pour olive oil overtop (just enough to cover garlic) and bake for 45 minutes or until the cloves are golden brown and tender.
  4. 4Preheat oven to 450F.
  5. 5In a baking dish, add tomatoes, red onion, capers, two tins of sardines, garlic confit with the garlic oil, white wine, and your favorite Italian seasoning.
  6. 6Drizzle extra olive oil if needed.
  7. 7Bake for 25 minutes.
  8. 8While the sardines are baking, slice your French baguette into crostinis.
  9. 9Drizzle baguette crostinis with olive oil and toast/ grill until crispy.
  10. 10Take the sardines out of the oven and squeeze half of a lemon over top.
  11. 11Serve with the toasted baguette.

Ingredients

  • 2 cans Sardines
  • 8 oz cherry tomatoes
  • 0.25 red onion, thinly sliced
  • 1 small jar (3.5 oz) capers
  • 20 garlic cloves
  • Olive oil
  • 2 tbsp white wine (I used Sauvignon Blanc)
  • 1 tsp Italian seasoning
  • salt
  • pepper
  • the juice from half of a lemon
  • 1 French baguette

Tips

  • Make sure your baking dish is high sided to prevent olive oil from overflowing.
  • Serve with toasted baguette crostinis.
