Remove lobster meat from shells and slice into thick medallions. Pat dry and season lightly with salt, pepper, and paprika.

Add olive oil and 2 tbsp butter to a skillet over medium-high heat.

Once sizzling, place lobster medallions flat-side down.

Cook 1 –2 minutes per side until caramelized edges form and lobster turns opaque.

Add minced garlic and the remaining butter to the skillet. Stir until fragrant, then squeeze in lemon juice.

Plate lobster medallions, spoon sauce on top, and sprinkle with parsley.

Serve with mashed potatoes, pasta, or rice.
