Pan Seared Lobster Medallions

Directions

  1. 1Remove lobster meat from shells and slice into thick medallions. Pat dry and season lightly with salt, pepper, and paprika.
  2. 2Add olive oil and 2 tbsp butter to a skillet over medium-high heat.
  3. 3Once sizzling, place lobster medallions flat-side down.
  4. 4Cook 1 –2 minutes per side until caramelized edges form and lobster turns opaque.
  5. 5Add minced garlic and the remaining butter to the skillet. Stir until fragrant, then squeeze in lemon juice.
  6. 6Plate lobster medallions, spoon sauce on top, and sprinkle with parsley.
  7. 7Serve with mashed potatoes, pasta, or rice.
