1In a large saucepan, heat 1 tbsp of sun-dried tomato oil and 1 tbsp of butter over medium heat. Cook the chicken until no longer pink, set aside, and cut into bite-sized pieces.
2Reduce heat to low, add another tbsp of butter, shallot and seasonings. Cook for 2-3 minutes (add olive oil if needed). Add garlic and cook for another minute.
3Pour in chicken broth, scraping up brown bits. Bring to a simmer, add pasta and stir. Cover and simmer until al dente (about 10-15 minutes), stirring occasionally.
4Add half & half, sun-dried tomatoes, and parmesan. Stir until melted.
5Add spinach, cooked chicken, and basil. Stir until spinach is wilted.
6Serve immediately and garnish with more parmesan.
