Lasagna Soup

Directions

  1. 1Add butter to a big pot on medium-low heat.
  2. 2Sauté the onion until translucent.
  3. 3Toss in minced garlic.
  4. 4Once garlic is fragrant, add in the ground beef.
  5. 5Season your ground beef with salt, pepper, Tony’s creole seasoning, red pepper flakes, paprika, Italian seasoning, oregano, black pepper, and adobo seasoning, then cook until browned.
  6. 6Add in 2 spoonfuls of tomato paste.
  7. 7Mix the beef with the tomato paste and cook for 3-4 minutes.
  8. 8Add in one jar of marinara sauce.
  9. 9Once the marinara sauce comes to a simmer, add in one box of beef broth.
  10. 10Bring the heat to medium-high.
  11. 11Once your meat sauce comes to a boil, add in the broken lasagna pieces.
  12. 12Cover and let it cook for 6-7 minutes.
  13. 13Toss in heavy cream, Parmesan, and mozzarella cheese.
  14. 14Follow that with a second round of the same seasonings, a little less than before.
  15. 15Mix before adding in fresh parsley.
  16. 16Cover for another 5 minutes and let it simmer on low.
  17. 17For the ricotta mixture, in a small bowl, add 2 parts ricotta, 1 part mozzarella, and 1 part Parmesan.
  18. 18Add in fresh basil and mix.
  19. 19Serve your lasagna soup with ricotta mixture, garnish with parsley and Parmesan.

  • 0.5 C heavy cream
  • 1 small handful Parmesan cheese
  • 1 small handful mozzarella cheese
  • 0.25 c fresh parsley
  • fresh basil
  • 2 parts ricotta
