Grate the potatoes.

Grab a kitchen towel and wrap the grated potatoes up and squeeze out as much liquid as you can.

Mix in a bowl, grated potatoes, mashed potatoes, all purpose flour, salt, baking powder and egg yolk.

Add milk and mix until you get a nice wet batter.

Heat a non-stick pan over medium heat, add a little bit of butter and a splash of oil.

Drop in small scoops of the batter, flatten slightly and cook for about three to four minutes per side until golden and crispy.

Once they are done, pop them onto a plate or tray and keep them warm.

250 grams grated potato
250 grams mashed potato
80 grams all purpose flour
0.5 teaspoon salt
0.5 teaspoon baking powder
1 egg yolk
0.5 cup milk
little bit butter
splash oil
0.5 cup optional Irish cheddar

Tips
Squeeze out the moisture of the grated potatoes so your boxty can crisp up properly.
Resist the urge of flipping the boxty too soon so you can develop that crust before you turn them over.
