Smashed Potato Salad
Directions
- 1Boil and mash potatoes.
- 2Add olive oil, salt, and pepper to the mashed potatoes.
- 3In a separate bowl, mix yogurt, lemon juice, salt, and pepper.
- 4Chop dill, parsley, chives, red onion, and cucumber.
- 5Add chopped herbs and vegetables to the yogurt mixture.
- 6Add the mashed potatoes to the yogurt mixture and mix well.
- 7Serve and enjoy!
