High Protein Loaded Biscoff Cookies

Directions

  1. 1In a bowl, add all the dry ingredients then mix it together.
  2. 2Now add low-fat yogurt, one egg, vanilla extract, then mix it until you have a thick consistency.
  3. 3Add some cooking oil spray on baking paper, wet your hands and form four equal cookies.
  4. 4Bake them in the oven with the settings on screen.
  5. 5For the frosting, mix together some yogurt with melted Biscoff, mix and add some icing powder and protein powder.
  6. 6Mix again and set in the fridge for 10 minutes until it's nice, thick and sweet.
  7. 7Once cooked, let the cookies cool.
  8. 8Top them all off with the frosting, crushed biscuits, drizzle the rest of the melted Biscoff spread across all four cookies and enjoy.

  • 24 g Coconut Flour
  • 30 g Self Raising Flour (or plain flour + 1 tsp baking powder)
  • 50 g Natural Sweetener (Lakanto Monkfruit Sweetener)
  • 1 scoop Protein Powder (your choice of flavour - Rule1 Vanilla Creme)
  • 2 Biscoff Biscuits (snack sized - crushed)
  • 1 Tsp Vanilla Extract
  • 170 g Flavoured or Plain Low Fat Greek Yoghurt (Danone YoPro Salted Caramel Yoghurt)
  • 1 Egg

  • 0.5 scoop Protein Powder
  • 30 g Sugar Free Icing Powder (Lakanto Monkfruit Icing Powder)
  • 40 g Melted Biscoff Spread
  • 1 Crushed Biscoff Biscuit
  • Leftover Melted Biscoff

Tips

  • When making the batter if the texture is too thick add a few splashes of milk until you reach the right consistency.
  • If you accidentally add too much milk and it’s too runny place it in the fridge until it’s firm enough for you to shape them into cookies.
