Directions

  1. 1Cook the orzo per the package instructions.
  2. 2Season the chicken breasts with onion powder, garlic powder, paprika, salt and black pepper.
  3. 3Add a splash of olive oil to the skillet and cook the chicken over medium high heat until it reached 165 internal temperature.
  4. 4Dice the cooked chicken into bite sized pieces.
  5. 5In a large skillet over medium high heat add the butter and olive oil.
  6. 6Once the butter is melted add in the diced onion, carrots and celery.
  7. 7Allow the veggies to sauté for 4-5 minutes until they start to soften up.
  8. 8Reduce the heat to low and sprinkle the all-purpose flour over the veggies and whisk together until it forms a paste/roux.
  9. 9While stirring constantly, allow the roux to cook for 2-3 minutes.
  10. 10Pour in the chicken broth and heavy whipping cream.
  11. 11Whisk together until no clumps are present, and the mixture starts to thicken.
  12. 12Add in the diced chicken and allow the mixture to simmer until it reaches desired thickness.
  13. 13Pour in drained orzo and stir to combine.
