Directions

  1. 1Prepare the ingredients by chopping the green onions and the onion, and separating the rice noodles.
  2. 2Marinate the beef with soy sauce, oyster sauce, baking soda, pepper, and chicken bouillon for at least 15 minutes.
  3. 3Make the sauce by mixing together dark soy sauce, regular soy sauce, oyster sauce, Shaoxing cooking wine, chicken bouillon, sugar, cornstarch, and white or black pepper.
  4. 4Add oil to the wok, add the marinated beef and cook through, then set aside.
  5. 5Add more oil to the wok, add garlic and onions, then add the noodles and cook until slightly charred.
  6. 6Push noodles aside and add a little more oil to the wok.
  7. 7Crack the eggs into the wok and mix with the noodles.
  8. 8Add the cooked beef to the wok.
  9. 9Add the sauce, bean sprouts, and green onions to the wok.
