Directions

  1. 1Add the ground almonds and caster sugar to a large bowl and mix them together.
  2. 2Grate the zest of half a lemon into the bowl.
  3. 3Add the egg whites and stir with a wooden spoon until the eggs are absorbed and a sticky dough forms.
  4. 4Use your hands to bring the dough together.
  5. 5Divide the dough equally and shape into perfectly round balls.
  6. 6Roll each ball in granulated sugar to coat.
  7. 7Place the balls on a baking tray with space in between.
  8. 8Garnish each biscuit with a skin-on almond, lightly pressing it into the center.
  9. 9Place in the fridge to rest.
  10. 10Bake in the oven at 160 degrees on fan mode.
  11. 11Let the biscuits rest and cool down after removing from the oven.

  • 1/2 whole lemon zest
  • 2 whole egg white
  • 4 tbsp granulated sugar
  • 10 whole skin-on almond

Tips

  • If the dough is not holding together and is too sticky, add a little more ground almonds.
  • If you want to make small bites instead of the traditional large Sardinian size, you can make about 18-20 instead of 10.
