Cut boneless, skinless chicken thighs into 1-inch pieces and place them in a bowl.

Add Greek yogurt, grated garlic, and grated ginger to the bowl.

Add garam masala, ground cumin, ground coriander, turmeric, smoked paprika, salt and pepper. Mix everything well.

Let the chicken marinate for as long as you are willing to.

Roughly chop a shallot, roughly chop some garlic, and roughly chop some ginger.

Add ghee to a hot pan.

Add marinated chicken to the pan and cook until lightly browned. Remove the chicken from the pan.

Add a little more ghee to the pan and sauté shallot, garlic, and ginger.

Once the shallot, garlic, and ginger are fragrant, add diced tomatoes, garam masala, ground cumin, ground coriander, chili powder, ground ginger, garlic powder, and lemon juice.

Blend the mixture using an immersion blender until smooth.

Add heavy cream and 8 tbsp of cold butter. Stir well.

Add the cooked chicken back to the pan and let it simmer in the sauce for about 10 minutes.

1 can diced tomatoes
1 cup heavy cream
8 tbsp cold butter
