French Onion Steak Pinwheels

Directions

  1. 1Butterfly the flank steak open.
  2. 2Tenderize the meat.
  3. 3Make some slices for the inside of the pinwheel.
  4. 4Dice some of the steak for the French onion dip.
  5. 5Put the onions in a pan with thyme and caramelize them.
  6. 6Layer provolone and caramelized onions on the butterflied steak.
  7. 7Roll the steak up nice and tight.
  8. 8Apply maple bourbon to the outside of the rolled steak.
  9. 9Smoke the steak at 225 degrees for about an hour and a half.
  10. 10Combine diced onion, cream cheese, beef stock, mayo, and sour cream, and cook them down together to make the French onion dip sauce.
  11. 11Sear off the pinwheel until crispy.
  12. 12Serve with a dollop of French onion cream sauce and garnish with chives.
