Directions

  1. 1Boil the pasta in a pot with water and salt.
  2. 2Drain the cooked pasta and set aside.
  3. 3Place the chicken breasts into a Ziploc bag and flatten them slightly using a meat tenderizer.
  4. 4Season the chicken breasts with oil, Cajun seasoning, onion powder, garlic powder, dry parsley, paprika, and Old Bay seasoning.
  5. 5Cook the chicken in a non-stick skillet with 3-4 tablespoons of oil for 5-10 minutes per side, ensuring it's cooked through.
  6. 6Remove the cooked chicken and set aside. Add 1 tablespoon of butter to the same skillet.
  7. 7Sauté chopped onion and red bell pepper in the skillet until softened.
  8. 8Add diced tomatoes and cook until softened.
  9. 9Pour heavy cream and chicken broth into the skillet.
  10. 10Stir in cream cheese until the sauce is creamy.
  11. 11Add 1 teaspoon of chicken bouillon and 1 teaspoon of Cajun seasoning, adjusting salt and pepper to taste.
  12. 12Add the cooked pasta to the skillet and stir to coat well with the creamy sauce.
  13. 13Cut the cooked chicken into bite-sized pieces and add them to the pasta.
  14. 14Sprinkle Parmesan cheese on top.
