Cowboy butter steak bites

Directions

  1. 1Toss cubed steak with oil, Worcestershire, garlic powder, and a generous amount of salt & pepper.
  2. 2Set aside while the pan heats.
  3. 3Heat a skillet over medium heat with a little oil or butter.
  4. 4Add onions, sugar, and salt.
  5. 5Cook 15-20 minutes, stirring occasionally, until soft, golden, and jammy.
  6. 6Remove from pan and set aside.
  7. 7Crank heat to medium-high/high.
  8. 8Add steak in a single layer (work in batches if needed).
  9. 9Sear 2–3 minutes per side until deeply browned.
  10. 10Remove and set aside.
  11. 11Lower heat to medium.
  12. 12Add butter to the same pan.
  13. 13Once melted, add garlic and shallot — cook ~30 seconds until fragrant.
  14. 14Stir in lemon juice, Dijon, parsley, chives, thyme, cayenne, chili flakes, smoked paprika, and salt.
  15. 15Add steak back to the pan.
  16. 16Toss to coat in the butter sauce for 1–2 minutes.
  17. 17Serve over creamy mashed potatoes and enjoy!

  • 2 pounds ribeye or sirloin steak, cubed
  • 1 tbsp neutral oil
  • 2 tsp Worcestershire sauce
  • 2 tsp garlic powder

  • 1 large yellow onion, sliced
  • 1 tsp granulated sugar
  • a heaping pinch salt
  • 12 tbsp unsalted butter
  • 5 garlic cloves, minced
  • 1 shallot, minced
  • 1 lemon, freshly squeezed
  • 1 tbsp Dijon mustard
  • 1 heaping tbsp parsley, chopped
  • 1 heaping tbsp chives, chopped
  • 1 tsp thyme
  • 1 tsp cayenne powder
  • 0.5 tsp red chili flakes
  • 0.5 tsp smoked paprika
  • to taste Salt
