Crockpot Beef Tips and Mashed Potatoes

Directions

  1. 1Heat a skillet with a little bit of oil.
  2. 2Season the stew meat really well with desired seasonings and two tablespoons of brown sugar, mixing and massaging it in.
  3. 3Slice up a yellow onion.
  4. 4Add the beef tips to the hot skillet, cook for a few minutes, flip for another few minutes, and stir until a nice crust forms.
  5. 5Once beef tips are done, set them aside.
  6. 6To the same pan, add a few tablespoons of butter.
  7. 7Once butter is melted, add the sliced onion and cook for a few minutes.
  8. 8Add some minced garlic and stir until fragrant.
  9. 9Add a splash of beef broth to deglaze the pan, scraping up all the bits from the bottom.
  10. 10Grab a crockpot and add the seared beef.
  11. 11Add the cooked onions to the crockpot.
  12. 12Add around 1.5 cups of beef broth (up to 2 cups for more gravy).
  13. 13Add one packet of au jus mix.
  14. 14Add a couple dashes of Worcestershire sauce.
  15. 15Add a half stick of sliced butter on top.
  16. 16For mashed potatoes, peel and dice 5 lbs of russet potatoes into small cubes.
  17. 17Wash the diced potatoes.
  18. 18Fill a pot with water, add a little salt, and cook the potatoes until tender.
  19. 19While potatoes cook, butter a 9x13 pan really well and add some Parmesan cheese.
  20. 20Once potatoes are tender, drain the water and start mashing them.
  21. 21Add one cup of sour cream.
  22. 22Add one block of cream cheese.
  23. 23Mash the potatoes again.
  24. 24Season with garlic powder and pepper.
  25. 25Use an electric mixer to make the mashed potatoes smooth.
  26. 26Add the mashed potatoes to the prepared 9x13 pan.
  27. 27Shred more Parmesan cheese for the top.
  28. 28Add a half stick of butter to the top as well.
  29. 29Cook the beef tips in the crockpot for 3 to 4 hours on high or 6 to 7 hours on low.
  30. 30Bake the mashed potatoes at 350°F for about 30-35 minutes until the top is golden.

Tips

  • For beef tips, use stew meat or a better cut of meat.
  • Cook beef tips until they have a nice crust.
  • Scrape up all the bits on the bottom of the pan when deglazing with beef broth.
  • For mashed potatoes, wash, peel, and dice potatoes into small cubes.
  • Butter the 9x13 pan well and add Parmesan cheese before adding mashed potatoes.
  • Use an electric mixer for smooth mashed potatoes.
