Directions

  1. 1Season the chuck roast with salt and pepper.
  2. 2Sear the chuck roast in a cast iron pot with olive oil.
  3. 3Add sliced onions to the pot and cook until caramelized.
  4. 4Add minced garlic and cook for a minute or two.
  5. 5Add tomato paste and cook until fragrant.
  6. 6Add flour and mix well.
  7. 7Pour in a cup of red wine, mix, and cook until slightly reduced.
  8. 8Add beef broth, rosemary sprig, and the seared chuck roast.
  9. 9Add carrots and potatoes to the pot.
  10. 10Cover and place in a preheated oven at 350 degrees for about 60 minutes.
  11. 11Remove from the oven and shred the meat with a fork.
  12. 12Serve over mashed potatoes and garnish with parsley.
