Blueberry lemon bars

Directions

  1. 1Preheat oven to 350°F and line an 8x8-inch pan.
  2. 2In a large bowl, add sugar and lemon zest.
  3. 3Rub them together with your fingers until it looks like wet sand.
  4. 4Add the butter and beat until light and fluffy.
  5. 5Mix in the eggs, one at a time, until combined.
  6. 6Add the lemon juice and vanilla and mix until combined.
  7. 7Gently mix in the flour and salt just until combined.
  8. 8Toss the blueberries in 1 Tbsp flour, then gently fold the blueberries and white chocolate chips into the batter without overmixing.
  9. 9Spread the batter evenly into the prepared pan.
  10. 10Top with more blueberries and white chocolate chips.
  11. 11Bake for 25–28 minutes, until the top looks matte and a toothpick inserted into the center comes out with a few moist crumbs.
  12. 12Let cool in the pan until room temperature.
  13. 13In a small bowl, combine powdered sugar, lemon juice, and lemon zest.
  14. 14Pour the icing on top of the cooled lemon bars and spread it evenly.
  15. 15Sprinkle more lemon zest on top and let it set for 20 minutes, or until firm to the touch.

  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1.5 Tbsp lemon zest
  • 2 eggs, room temperature
  • 3 Tbsp lemon juice
  • 2 tsp vanilla
  • 1.25 cups all-purpose flour
  • 0.5 tsp salt
  • 0.5 cup blueberries, tossed with 1 Tbsp flour
  • 0.5 cup white chocolate chips
  • 1.25 cups powdered sugar
  • 2 -3 Tbsp lemon juice
  • 1 tsp lemon zest

Tips

  • Do not overbake the bars.
  • Let the bars cool in the pan until room temperature before icing.
