Season pork with minced garlic and salt, then combine with all-purpose flour.

In a blender, combine 1 1/2 cups of chicken broth, Anaheim peppers, jalapeño (optional), and cilantro; blend until smooth.

Heat a cast iron skillet on high heat for three minutes, then add oil.

Add seasoned pork pieces and sear for six to eight minutes on medium heat.

Add chopped onions and cook until translucent.

Add ground cumin and black pepper.

Add blended sauce and remaining chicken broth to the skillet.

Bring to a boil, then reduce heat to medium-low, and continue to cook for 30–35 minutes, stirring periodically.

During the last 10 minutes of cooking, add Mexican oregano.

8 roasted Anaheim peppers
1 jalapeño or serrano pepper
15 stems cilantro
