Directions

  1. 1Add oil to a pan.
  2. 2Add corn, diced red onion, and diced jalapeño to the pan and cook for five minutes.
  3. 3Add sour cream, cream cheese, tajin, and paprika to the pan.
  4. 4Add shredded cheese and mix for three minutes.
  5. 5Add cilantro and the juice of one lime.
  6. 6Add queso cotija and mix and cook for two minutes.
  7. 7Garnish with queso cotija, cilantro, and jalapeño slices.

  • 1 cup red onion
  • 1 jalapeño
  • 0.5 cup sour cream
  • 0.5 cup cream cheese
  • tajin
  • paprika
  • 0.5 cup shredded cheese
  • 0.5 cup cilantro
  • 1 lime juice
  • 0.25 cup queso cotija
