Blueberry Poptarts

Directions

  1. 1Mash the blueberries in a bowl. Add the zero-calorie sweetener, lemon juice, and cornstarch and water mixture. Mix and microwave for 1-2 minutes until the blueberry filling begins to thicken. Set aside.
  2. 2Cut 2 low calorie tortillas in half. Fold into a cone shape.
  3. 3Spread 1/4 tsp of the flour and water mixture onto the inner part of the tortilla.
  4. 4Add 2 tbsps of the blueberry filling into the cone shape created by the tortilla.
  5. 5Seal by spreading additional paste on the top and pressing the top closed using a fork.
  6. 6Add all 4 pop tarts to an air fryer. Lightly spray with 1 tsp of oil. Air fry for 8-10 minutes on 400F.
  7. 7Mix swerve powdered sweetener and almond milk together to create the icing.
  8. 8Top each blueberry pop tart with 1 tbsp of icing. Add sprinkles if desired.
