Marinate thinly sliced top sirloin (or bistec) with minced garlic, oregano, cumin, onion powder, paprika, salt, pepper, lime juice, and sour orange juice for at least 30 minutes.
Sauté diced onions and peppers until translucent.
Prepare black beans by mixing in a pot with water, seasonings and bay leaves until thickened, then add minced garlic, sugar and vinegar.
Prepare sweet plantains by slicing and air frying at 380F for 5 minutes and then at 400F for another 5 minutes until golden brown.
Dip the marinated steak into an egg mixture, then coat with pulverized soda crackers.
Shallow fry the breaded steak in a pan until golden brown and crispy (about 2-3 minutes total).
Serve the crispy steak with rice, black beans, and sweet plantains.
