1Combine all ingredients for the seasoned ground pork in a bowl. Mix until well combined.
2Combine all ingredients for the sticky glaze in a saucepan.
3Bring the glaze to a boil then simmer 3-4 minutes, until slightly thickened.
4Divide the pork into 8 equally-sized balls. Place on top of each corn tortilla then smash over the entire surface of the tortilla.
5In a large skillet, add the olive oil.
6Cook pork-side down for 2 minutes, then flip to cook 1 minute, or until the tortilla has crisped up along the edges.
7Brush the pork in the glaze.
8Flip to cook for 30 seconds.
9If needed, cook the tortilla another 1 minute. Repeat with remaining tortillas.
10Garnish with the chopped cilantro.
11Garnish with pickled onions.
12Garnish with scallions and serve to enjoy warm!
