Directions

  1. 1Peel the skin from the pork belly and cut the skin into bite-sized pieces.
  2. 2Slice the pork belly into thin pieces, about 0.5 cm thick.
  3. 3Pan-fry the pork belly until golden and fragrant.
  4. 4Scoop out any excess fat from the pan.
  5. 5Add 2 full tablespoons of minced shallots or dried onions to the pan and stir-fry until fragrant.
  6. 6Add 2 full tablespoons of fish sauce and 1 tablespoon of sugar to the pan with the meat.
  7. 7Stir over low heat until the fish sauce and sugar mixture thickens and coats the meat.
  8. 8Add one bowl of white water to the pan.
  9. 9Bring to a boil and season with a little MSG (about 1 teaspoon).
  10. 10Slice green onions.
  11. 11Boil the dish for a little longer to let the flavors meld.
  12. 12Sprinkle green onions and crushed pepper on top before serving.

Tips

  • Do not slice the pork belly too thinly.
  • Cook the fish sauce and sugar with the meat over low heat until it thickens and adheres to the meat before adding water.
  • If there are children, omit the pepper.
