Heat olive oil in a Dutch oven over medium heat.

Add one yellow onion, a teaspoon of red pepper flakes, and a teaspoon of Italian seasoning.

Add a big pinch of salt and cook until the onions are soft (6-8 minutes).

Add six cloves of garlic and cook for 30 seconds until fragrant.

Add 1.25 pounds of ground beef, a big pinch of salt, a big pinch of pepper, and a teaspoon of paprika.

Break up the ground beef and brown it.

Make room in the middle and add a big squeeze of tomato paste, cooking it for a few minutes.

Bring all ingredients together.

Add three cups of beef broth and one cup of heavy cream.

Bring the mixture to a low boil.

Add one pound of pasta shells.

Mix in the pasta shells, lower the heat to a simmer, and cook until they are tender (15 to 20 minutes, 16 minutes seems perfect).

Add 5 ounces of sharp cheddar cheese.

Taste and season as desired with salt and pepper.
