Directions
- 1Heat olive oil in a Dutch oven over medium heat.
- 2Add one yellow onion, a teaspoon of red pepper flakes, and a teaspoon of Italian seasoning.
- 3Add a big pinch of salt and cook until the onions are soft (6-8 minutes).
- 4Add six cloves of garlic and cook for 30 seconds until fragrant.
- 5Add 1.25 pounds of ground beef, a big pinch of salt, a big pinch of pepper, and a teaspoon of paprika.
- 6Break up the ground beef and brown it.
- 7Make room in the middle and add a big squeeze of tomato paste, cooking it for a few minutes.
- 8Bring all ingredients together.
- 9Add three cups of beef broth and one cup of heavy cream.
- 10Bring the mixture to a low boil.
- 11Add one pound of pasta shells.
- 12Mix in the pasta shells, lower the heat to a simmer, and cook until they are tender (15 to 20 minutes, 16 minutes seems perfect).
- 13Add 5 ounces of sharp cheddar cheese.
- 14Taste and season as desired with salt and pepper.
- 15Plate it up and garnish with chives.
