Directions

  1. 1Place olive oil, butter, tomato, and onion in a pan, cover it and cook for 15 minutes.
  2. 2Peel the tomato, add minced garlic, and mash lightly.
  3. 3Add tomato paste if desired.
  4. 4Add starchy pasta cooking water, salt, pepper, cream, and parmesan cheese to bind.
  5. 5Add the drained pasta and garnish with parsley leaves.

  • pasta cooking water
  • salt
  • black pepper
  • heavy cream
  • parmesan cheese
  • chihuahua cheese (optional)
  • pasta
  • parsley leaves

Tips

  • If you don't have tomato paste, it is okay to omit it.
  • If you don't want to use parmesan cheese, you can substitute it with traditional Chihuahua cheese to bind the sauce.
