Season the pork loin with the onion powder, garlic powder, and black pepper.

Whisk together the brown sugar, balsamic vinegar, soy sauce, and minced garlic in a small bowl until the sugar is mostly dissolved.

Place the pork loin into the slow cooker, pour the balsamic mixture over the top, and turn the meat to coat all sides.

Cover and cook on LOW for 4-5 hours, or until the pork is tender and reaches an internal temperature of 145°F.

Transfer the pork loin to a cutting board, cover loosely with foil, and let it rest for about 10 minutes.

Pour the cooking juices into a small saucepan. Whisk together the cornstarch and water, then stir into the juices.

Simmer the sauce over medium heat, stirring constantly, until it thickens into a glossy glaze.

Slice the pork loin against the grain and drizzle with the warm balsamic glaze. Garnish with fresh parsley if desired.

2 tbsp water
2 tbsp fresh parsley, chopped (optional)
