Mediterranean Halloumi & Potato Bake

Directions

  1. 1Preheat oven to 200 degrees.
  2. 2Chop baby potatoes into small chunks & lightly oil.
  3. 3Season with minced garlic, chilli flakes, smoked paprika, mixed herbs, salt & pepper.
  4. 4Pop into the oven for 20 minutes.
  5. 5After 20 minutes, remove from the oven and add sliced red onion & tenderstem broccoli.
  6. 6Give it a good mix and pop back into the oven for 20 minutes.
  7. 7Whilst that cooks, heat sundried tomato paste & minced garlic in a small saucepan and add chopped tomatoes.
  8. 8Season with mixed herbs, salt & pepper along with ketchup.
  9. 9Tear up your basil leaves & add into the mix.
  10. 10Bring to a simmer and allow to thicken slightly.
  11. 11Remove potatoes from oven (checking that they’re soft) and switch the oven to grill.
  12. 12Top potatoes with spoonfuls of your tomato mix & sliced halloumi.
  13. 13Brush halloumi with a little olive oil & herb mix before popping under the grill for 5-10 minutes, or until the halloumi is golden and bubbling.
  14. 14I top mine with greek yoghurt mixed with some herbs & black pepper and it BANGS every time!

  • 1 handful tenderstem broccoli
  • 1 tbsp sun-dried tomato paste
  • 1 tin chopped tomatoes
  • 1 handful basil leaves
  • 1 tsbp ketchup
  • 1 block halloumi
  • Greek yoghurt

Tips
