Directions

  1. 1Wash all the tomatoes.
  2. 2Chop the tomatoes into medium-sized pieces and place them in a large bowl.
  3. 3Peel and cut the onion into quarters.
  4. 4Add the onion quarters, cherry tomatoes, and yum yum peppers to the bowl with the chopped tomatoes.
  5. 5Season with salt, black pepper, and garlic powder.
  6. 6Drizzle olive oil over the vegetables.
  7. 7Cut the top off the head of garlic.
  8. 8Transfer the seasoned vegetables and the head of garlic to a roasting pan.
  9. 9Drizzle more olive oil over the vegetables in the pan.
  10. 10Cover the roasting pan with aluminum foil.
  11. 11Place the pan in the oven to roast.
  12. 12Remove the foil from the roasting pan while it is still in the oven.
  13. 13Remove the roasted vegetables from the oven.
  14. 14Transfer the roasted tomatoes, peppers, and onions into a blender.
  15. 15Squeeze the roasted garlic cloves into the blender.
  16. 16Add fresh basil, oregano, and parsley to the blender.
  17. 17Blend the ingredients until smooth to create the sauce.
  18. 18Pour the finished tomato sauce into a mason jar for storage.
