Combine all brine ingredients (pineapple juice, brown sugar, soy sauce, honey, minced garlic, grated ginger, black pepper) and mix until the sugar dissolves.
Submerge the ham in the brine.
Refrigerate the ham overnight to marinate.
Preheat the oven to 320°F (160°C).
Cover the ham tightly with foil and bake for 40 minutes.
Remove the foil and increase the oven temperature to 400°F (200°C).
Bake for an additional 15 minutes or until the surface is lightly caramelized.
While the ham is in the oven, melt 1 stick of butter over low heat in a pan.
Add the minced garlic and cook gently for about 3 minutes, until fragrant but not browned.
Stir in the chili flakes (if using), honey, soy sauce, paprika, and salt.
Turn off the heat and add the remaining cold butter in slices.
Mix until fully melted and the sauce becomes glossy and emulsified.
When the ham is done baking, generously brush or pour the honey garlic glaze over the entire ham.
