Directions

  1. 1Add 4 eggs to a large mixing bowl.
  2. 2Add one box of vanilla pudding mix to the bowl.
  3. 3Pour in 1/4 cup of vegetable oil.
  4. 4Add one yellow cake mix to the bowl.
  5. 5Pour in 1 and 1/3 cups of cold water.
  6. 6Blend all the ingredients together with a hand mixer on a low setting.
  7. 7Once blended, add 2 cups of sweetened coconut to the cake batter.
  8. 8Fold the coconut into the cake batter gently with a spoon.
  9. 9Pour the mixture into a greased cake pan.
  10. 10Level out the cake batter evenly in the pan using a spoon.
  11. 11Bake the cake at 350°F (175°C) for 35 minutes.
  12. 12For the frosting, add 2 cups of powdered sugar to a clean mixing bowl.
  13. 13Add 1/2 cup of coconut to the powdered sugar.
  14. 14Add 8 ounces of softened cream cheese to the bowl.
  15. 15Add one stick of butter to the bowl.
  16. 16Add two tablespoons of heavy whipping cream.
  17. 17Add one teaspoon of vanilla extract.
  18. 18Blend the frosting ingredients together with a hand mixer until smooth.
  19. 19Once the cake has cooled, spread the coconut cream cheese frosting evenly over the top.
  20. 20Cut a piece of the cake and enjoy!
