Directions

  1. 1Finely chop two medium onions.
  2. 2Mash seven garlic cloves into a fine paste using a pestle and mortar.
  3. 3Prepare the meat sauce by sauteing the onions in 2 tbsp of oil until they are lightly colored and dry.
  4. 4Add the garlic paste and cook until brown.
  5. 5Add 1 kg of ground lamb mince, breaking up any lumps with a spoon.
  6. 6Season generously with salt and black pepper, and cook until the water evaporates.
  7. 7Add 2 tbsp of plain flour and combine well with the lamb.
  8. 8Deglaze with 2.5 tbsp of Worcestershire sauce and 2 tbsp of tomato paste. Cook for 3 minutes.
  9. 9Add 5 sprigs of thyme and 1 tbsp fresh rosemary, stir, and cook on low-medium heat for 25 minutes until the sauce has thickened.
  10. 10Remove the thyme and rosemary from the sauce.
  11. 11In a separate pan, saute 3 medium carrots and half a swede in 1 tbsp of oil. Add 100 ml of water, cover, and cook on low heat until tender.
  12. 12Meanwhile, boil 1.2 kg potatoes until soft. Drain, and mash completely.
  13. 13Add 130 g of butter and 120 ml of warm milk to the mashed potatoes. Mash until smooth.
  14. 14Add three egg yolks and mix well.
  15. 15Season mashed potatoes with salt and pepper.
  16. 16Spread the mince filling evenly in a baking dish.
  17. 17Top with the sauteed carrots and swede.
  18. 18Spread the mashed potatoes over the vegetables.
  19. 19Brush the mashed potato with an egg yolk for browning and bake in a preheated oven at 200°C for 20-25 minutes, or until golden brown.
  20. 20Prepare the pea puree by blending 1 cup of boiled peas, 1 tsp of thyme, 15 g of fresh coriander, 0.5 tbsp of vinegar, and salt to taste.
