2Season potatoes with smoked paprika, onion powder, garlic powder, dried parsley, salt, and pepper.
3Spray potatoes with cooking oil.
4Mix potatoes until fully coated.
5Air fry potatoes at 200°C for 20 minutes (or oven at 220°C for 20-25 minutes).
6Season lean diced beef with salt and pepper.
7Add beef to a pan and cook on high heat until golden and crispy.
8Turn heat down and add unsalted butter to the pan.
9Add chopped garlic and a sprinkle of parsley to the pan.
10Stir to melt the butter.
11For the peppercorn sauce, add unsalted butter to a pan.
12Pour 1 cup of beef stock into the pan.
13Add crushed peppercorns to the pan.
14Bring the sauce to a simmer.
15Add chopped garlic to the sauce.
16Add light cream cheese to the sauce.
17Turn the heat down to melt the cream cheese.
18Add cornstarch mixed with water to thicken the sauce.
19Divide crispy potatoes, steak bites, and sauce into four meal prep containers.

Tips
Store in meal prep boxes with the sauce separated (I used plastic shot glasses). Refrigerate for up to 5 days.
When it’s time to eat, reheat the potatoes for 2-3 minutes in the air-fryer till crispy. Microwave the steak bites for 2-3 minutes till hot. Microwave the sauce separately for 15-20 seconds, then pour over your steak bites and enjoy!
