Pasta Alla Genovese

Directions

  1. 1Chop the onions.
  2. 2Dice the carrots.
  3. 3Chop the celery.
  4. 4Dice the beef chuck roast into large pieces.
  5. 5Season the beef with salt.
  6. 6Sear the beef pieces in a pot with olive oil until browned on all sides, then remove them.
  7. 7Add the diced carrots and celery to the pot.
  8. 8Season with salt.
  9. 9Return the seared beef to the pot with the vegetables, along with any juices.
  10. 10Pour in white wine.
  11. 11Add the chopped onions.
  12. 12Add cherry tomatoes and a bay leaf.
  13. 13Season with more salt.
  14. 14Cover the pot with a lid and cook for several hours until the beef is tender and the onions have melted into a sauce.
  15. 15Cook the pasta in boiling water.
  16. 16Transfer the cooked pasta to the pan with the Genovese sauce.
  17. 17Mix the pasta with the sauce.
  18. 18Grate pecorino romano cheese over the pasta and sauce.
  19. 19Serve the pasta alla Genovese on a plate.
  20. 20Garnish with more grated pecorino romano.
