Directions
- 1Slice the shallots.
- 2Cut the butter into cubes.
- 3Chop the fresh dill.
- 4Add white wine to a pot.
- 5Add champagne vinegar to the pot.
- 6Add shallots to the pot.
- 7Reduce the mixture by 90%.
- 8Add heavy cream and reduce by 20%.
- 9Whisk in the butter cubes a little at a time until fully incorporated.
- 10Season the sauce to taste.
- 11Coat the salmon fillet with everything seasoning on all sides.
- 12Heat a pan over medium heat and add algae cooking oil.
- 13Place the salmon fillet in the hot pan and pan-sear it until cooked through.
- 14Flip the salmon to cook the other side.
- 15Add butter to the pan with the salmon.
- 16Baste the salmon with the melting butter.
- 17Strain the sauce into a copper pot.
- 18Add lemon juice to the sauce.
- 19Add chopped dill to the sauce.
- 20Stir the sauce to combine the ingredients.
- 21Pour the lemon dill butter sauce onto a plate.
- 22Place the pan-seared everything salmon on top of the sauce.
- 23Garnish with fresh dill sprigs.
