One Pot Alfredo Orzo

Directions

  1. 1Heat a drizzle of olive oil in a large skillet or pot over medium heat.
  2. 2Add the ground beef and cook until browned and fully cooked.
  3. 3Remove the cooked ground beef from the pan and set aside, draining excess grease if needed.
  4. 4In the same pan, add the butter and olive oil.
  5. 5Add the orzo and stir, toasting for 2-3 minutes until lightly golden.
  6. 6Season the orzo with salt, pepper, garlic powder, and Italian seasoning.
  7. 7Pour in the beef broth.
  8. 8Bring to a simmer and cook for 7-9 minutes, stirring often, until the orzo is al dente and most liquid is absorbed.
  9. 9Once almost done, add creamy Alfredo sauce.
  10. 10Add the cooked ground beef, baby spinach, and ½ cup of Parmesan cheese.
  11. 11Stir everything together and cook for a few more minutes until the spinach is wilted and everything is heated through.
  12. 12Top with the remaining Parmesan and the Mexican cheese blend.
  13. 13Broil in the oven for about 3 minutes until bubbly and golden, or let melt with the lid on.

  • 1 jar (15 oz) Alfredo sauce
  • 3 cups baby spinach
  • 0.75 cup grated Parmesan cheese
  • 0.25 cup shredded Mexican cheese blend
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
