Heat a drizzle of olive oil in a large skillet or pot over medium heat.

Add the ground beef and cook until browned and fully cooked.

Remove the cooked ground beef from the pan and set aside, draining excess grease if needed.

In the same pan, add the butter and olive oil.

Add the orzo and stir, toasting for 2-3 minutes until lightly golden.

Season the orzo with salt, pepper, garlic powder, and Italian seasoning.

Pour in the beef broth.

Bring to a simmer and cook for 7-9 minutes, stirring often, until the orzo is al dente and most liquid is absorbed.

Once almost done, add creamy Alfredo sauce.

Add the cooked ground beef, baby spinach, and ½ cup of Parmesan cheese.

Stir everything together and cook for a few more minutes until the spinach is wilted and everything is heated through.

Top with the remaining Parmesan and the Mexican cheese blend.

Broil in the oven for about 3 minutes until bubbly and golden, or let melt with the lid on.

0.75 cup grated Parmesan cheese
0.25 cup shredded Mexican cheese blend
1 tsp Italian seasoning
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
