1For the burger bread, mix all ingredients except butter.
2Flour your work surface and knead the dough for 8 minutes by hand or 5 minutes at medium speed in a stand mixer before incorporating the butter.
3Knead for the same amount of time and let it rest under a cloth at room temperature for 1 hour.
4Take the dough back, degas it, knead it again for 2 minutes before letting it rise again for 45 minutes covered.
5Finally, cut it into 4 beautiful balls and let them rise covered for 30 minutes before coating them with milk and baking them in the oven for 20 minutes at 180°C.
6While the bread is baking, prepare the ketchup by mixing all the ingredients in a bowl.
7For the patty mixture, do the same.
8Cook the patties and assemble your burger.
9Melt butter and brown the burger bread.
10Cook the burgers.
11Put a little bit of cheese to melt on the burger under a bell for 1 minute.
12Assemble the burger with tomato, salami, and pickle.
