Serves 348

Directions

  1. 1Break up clumps in sugar, peach powder, and molasses powder.
  2. 2Combine all ingredients.
  3. 3Pulse 3 to 5 times in a spice grinder to achieve a shaker texture.

Ingredients

  • 128 g brown sugar
  • 48 g granulated garlic
  • 40 g freeze-dried peach powder
  • 32 g paprika
  • 24 g ancho chile powder
  • 20 g cane sugar
  • 16 g dehydrated onion flakes
  • 16 g molasses powder
  • 8 g black pepper
  • 6.4 g ground mustard
  • 4 g ground coriander
  • 3.2 g ground ginger
  • 2 g cayenne pepper

Equipment

spice grinder

Tips

  • Do not dust the seasoning.
  • Use 44g of seasoning per 1 1/2 to 2 lb of food.
  • Add salt separately at the pan.
  • Cook over medium or indirect heat as sugar and peach powder burn fast on ripping direct heat.
  • Bourbon peach glaze: Mix 44g seasoning, 2 tbsp peach preserves, 1 tbsp apple cider vinegar, 1 tbsp bourbon or water, and 1 tbsp butter. Simmer for 2 to 3 minutes and brush on in the last few minutes of cooking.
  • Store in an airtight glass jar in the pantry. Best quality for 2 to 3 months.
