1Boil 10 eggs for about 10 minutes and then peel them.
2Prep and chop up all your veggies: one medium onion, six cloves of garlic, three wiri wiri peppers, green onions, coriander leaves, grate half a zucchini, and cut up two large potatoes.
3In your pot, add some oil and add in your onion, your garlic, and wiri wiri pepper and let that fry up for a few minutes.
4Then add in 3/4 teaspoon of turmeric, two teaspoons of curry powder, half a teaspoon of garam masala, half a teaspoon of jira, and water.
5Let that cook for a few minutes.
6Next, add in your potatoes and your grated zucchini and salt.
7Let that cook down for a few minutes and stir occasionally.
8Add some boiling water, enough to cover the potatoes, and let that boil for about 10 minutes until the potatoes are half cooked.
9Then add in your eggs.
10Let that boil until the potatoes are fully cooked.
11Add your green onions and coriander and serve.

Salt to taste is important.
If the curry looks too thick, you can add in some more water.
Egg curry goes well with dal puri.
You can get the boiled eggs to form a layer to get a brown color then put in the potato, the taste is better.
