1Finely dice the red onion, garlic cloves, bell pepper, and jalapeño peppers. Remove the core of the cabbage and roughly chop into bite-sized pieces.
2Heat the pan to medium heat and add olive oil. Add the diced onions and garlic, and sauté.
3Add the lean ground beef to the pan and season with salt, the fajita or taco seasoning, smoked paprika, garlic powder, and cayenne. Use a spatula to mince the meat while it cooks.
4When the meat is almost cooked through, add the bell pepper and jalapeño, pour in the enchilada sauce, and add the chopped cabbage.
5Cover the pan and cook for 10-12 minutes until the cabbage wilts.
6Mix the ingredients to coat the cabbage, then cook uncovered for another 4-5 minutes until excess liquid is absorbed.
7Top with shredded cheese, then cover for 2 minutes to melt the cheese.
8Serve topped with greek yogurt or sour cream, cilantro, and lime juice.
