Directions

  1. 1Place all dried fruits (raisins, sultanas, currants), chopped almonds, mixed peel, brown sugar, nutmeg, and allspice/mixed spice into an ovenproof bowl.
  2. 2Zest two oranges and two lemons directly into the mixture, being careful with your fingers.
  3. 3Grate three Bramley apples into the mix, leaving the skins on, which was very successful.
  4. 4Mix all the ingredients in the bowl together using a knife or a wooden spoon.
  5. 5Add the juice of the two lemons and two oranges to the mixture and mix again.
  6. 6Chop 250g of butter and arrange it on top of all the other ingredients in the bowl.
  7. 7Place the uncovered bowl into the oven and cook at 100°C fan for three hours.
  8. 8Stir the mincemeat once halfway through the cooking time.
  9. 9Once cooked, remove from the oven and add six tablespoons of brandy, rum, or whiskey.
  10. 10Stir the mincemeat thoroughly, ensuring the bowl is on a tea towel to prevent it from cracking on cold granite.
  11. 11Let the mincemeat cool completely, stirring a few times over several hours.
  12. 12Once fully cool, transfer the mincemeat into jars.
