Directions

  1. 1Add 10 slices of centercut bacon to a sheet pan and bake at 400 for 20 minutes until golden brown and crispy.
  2. 2Remove bacon, remove excess grease, layer 600g of shredded potatoes over the sheet pan and bake at 400 for 20 minutes.
  3. 3Crumble the cooked bacon and combine it with 10 slices of diced Canadian bacon, 90g of maple syrup, salt, garlic powder, and thyme.
  4. 4Layer the bacon mixture on top of the cooked hashbrowns.
  5. 5Pour a blended mixture of 4 eggs, 450g of egg whites, 300g of cottage cheese, and 12g of corn starch over the bacon and hashbrowns.
  6. 6Season with salt and pepper, and top with 60g of shredded cheddar cheese.
  7. 7Bake at 400 for 25-30 minutes, or until the center is firm and the top is lightly browned.
  8. 8Let sit for 10 minutes before slicing into 10 evenly sized pieces.
  9. 9Assemble the burritos: Add a piece of the mixture to a tortilla with a spicy cream sauce (400g fat free greek yogurt, 50g hot sauce, garlic, salt, and pepper).
