1In a bowl, mix together pork mince, breadcrumbs, seasoning mix, egg, and milk.
2Form the mixture into a rib shape.
3Heat the Maccas barbecue sauce in a saucepan.
4Cook the formed pork rib in a cast iron pan.
5Toast the buns in the same pan.
6Assemble the first McRib: toasted bun, rib-shaped pork, Maccas barbecue sauce, pickles, and onion.
7For the second McRib, prepare the dry rub by mixing salt, brown sugar, mustard powder, garlic powder, and paprika.
8Remove the membrane from the ribs and spread yellow mustard on them.
9Generously sprinkle the dry rub on the ribs.
10Wrap the ribs in foil with a little apple cider vinegar and bake at 150°C for 3 hours.
11Prepare the barbecue sauce: ketchup, salt, brown sugar, apple cider vinegar, maple syrup, smoked paprika, garlic powder, Worcestershire sauce, and magic seasoning. Bring to a simmer until well incorporated.
12Remove the ribs from the oven, place them on baking paper, and remove the bones.
13Glaze the ribs with the barbecue sauce and fold the baking paper like a sandwich.
14Assemble the second McRib: toasted bun, ribs, barbecue sauce, pickles, and onion.
15For the Smokin’ McAndy, repeat the steps for the second McRib but smoke the ribs at 110–120°C for 3 hours, then glaze and smoke for another 15 minutes.
16Assemble the third McRib: toasted bun, smoked ribs, barbecue sauce, pickles, and onion.
