Serves 1

Directions

  1. 1Peel and finely slice the onions using a mandolin, food processor slicer, or knife.
  2. 2Add oil to the onions and cook on a slow heat ring until reduced, soft, and nice and golden brown.
  3. 3Stir in the chilli flakes, black pepper, and garlic granules.
  4. 4Add a large knob of butter and continue to bubble slowly.
  5. 5Stir in the granulated sugar until melted and thickened.
  6. 6Mix in the freshly chopped chilli.
  7. 7Add a glog of white wine and stir; let it bubble to burn off the alcohol.
  8. 8Allow the jam to cool, then pot it up.

Ingredients

  • 1.5 kg onion
  • 1 glog olive or vegetable oil
  • 1 tbsp chilli flakes
  • black pepper
  • garlic granules
  • butter, large knob
  • 12 oz granulated sugar
  • freshly chopped chilli, chopped, seeds included
  • 1 glog white wine

Equipment

mandolinpotspoon

Tips

  • Use a mandolin, food processor, or knife to slice the onions.
  • Keep the mixture from sticking to the bottom of the pot by pulling it away with your spoon.
  • Test for thickness by placing a teaspoon of the mixture onto a cold surface.
