In a bowl, mix 1 cup of apple cider, 1 tablespoon of apple cider vinegar, 1 tablespoon of yellow mustard, 1/2 cup of brown sugar, and 1 tablespoon of garlic.
Add 1 tablespoon each of onion powder, garlic powder, chili powder, and paprika, plus salt and pepper to taste.
Add a little bit of cinnamon and allspice.
Place the pork loin in a crock pot, top it with the apples and onions, and pour the juice over it. Add a little more paprika on top.
Cook on low for 6 hours or high for 3 hours.
Shred the pork and onions and set aside.

Add the gravy back to the crock pot and let it cook for 10 more minutes.
Serve with mashed potatoes, candied carrots, and cranberry sauce.
