1Bake potatoes at 180°C for 50-60 minutes until tender. While still warm, pass them through a fine sieve.
2In a saucepan, bring water, butter and a pinch of salt to a boil. Reduce heat, add flour and beat until a smooth paste forms. Transfer to a bowl to cool slightly.
3Beat eggs one at a time into the paste until smooth.
4Mix the potato mash with an equal amount of the choux paste until smooth.
5Heat oil to 170°C. Using a spoon, carefully drop small amounts of the mixture into the hot oil. Fry for 3-4 minutes until golden.
