Add black peppercorns, coriander seeds, and dill seeds to a dry pan.

Roast them over medium heat until fragrant and they start popping.

Allow them to cool.

Grind the toasted seeds in a spice grinder.

Mix the ground spices with paprika, kosher salt, granulated garlic, and onion powder.

Store the Montreal steak seasoning in an airtight container.

2 tablespoons Black peppercorns
1 tablespoon Paprika
1 tablespoon Kosher salt
1 tablespoon Granulated garlic
1 tablespoon Granulated onion
1 tablespoon Coriander seeds
1 teaspoon Dill seeds

Tips
If you don't have a spice grinder, use a ziplock bag and a rolling pin or can to crush the seeds.
If using a grinder for both coffee and spices, clean it out with a piece of soft bread to remove spice residue before grinding coffee.
