2Boil potato chunks in a pot of boiling water until fork tender, for about 10-15 minutes.
3For the sauce, add garlic, spring onion, sesame seeds, curry powder and chilli powder to a heat proof bowl then pour hot oil before adding soy sauce, black vinegar, chinese bbq sauce, peanut butter and give it a good mix.
4Add some hot water to loosen the mixture if needed.
5Drain the cooked potatoes and mash until there are no lumps.
6Add salt and potato starch and mixture together until a dough is formed.
7Portion out the dough until you get small equal sized balls
8Add the potato balls in a pot of boiling water and boil for around 4 minutes or until they float to the top.
9Place them into a bowl of cold water to cool them down.
10Add the cooked potato dumplings into a bowl and top with the sauce made earlier.
11Top with coriander and chilli oil.

Tips
Potato starch is recommended over tapioca starch for better chew.
